This simple bhindi (okra) is how my mom used to prepare okra for us growing up. It was always one of my favourites. When I started to cook, I asked my mom how to make the bhindi she always made for us and I was so surprised to find out how simple it is to make! All you do is fry it in a little bit of oil and sprinkle with salt..so simple yet so delicious!
3/4 – 1 lb of okra, trimmed and cut into 1/4 inch slices
2-3 tbsp oil
salt to taste
Heat a non-stick skillet over medium-high heat. Add the oil and once hot, add the okra and sprinkle with salt. Fry until the okra is tender and light brown. If you find the okra is sticking to the pan a lot, add a bit more oil. Serve hot!
Nothing like a simply stir fry which tastes amazing with hardly any work!
