Banana Bread is always a favourite in our home. The recipe I usually make is our favourite but it makes a lot. I wanted a smaller loaf that wasn’t as sweet. I found this Lemon Olive Oil Banana Bread recipe and liked that it has some whole wheat flour in it. I didn’t put the glaze as in the original recipe to keep it more like a bread than a cake.
Lemon Olive Oil Banana Bread
Adapted from 101 Cookbooks
1 cup all-purpose flour
1 cup whole wheat flour
3/4 cup brown sugar
3/4 tsp baking soda
1/2 tsp salt
1/3 cup extra-virgin olive oil
2 eggs, lightly beaten
3 ripe bananas, mashed
1/4 cup yogurt
zest of one lemon
1 tsp vanilla extract
Preheat oven to 350°F. Spray a loaf pan with baking spray.
In a large bowl, whisk together flours, brown sugar, baking soda and salt.
In a medium bowl, whisk together oil, eggs, bananas, yogurt, lemon zest and vanilla. Add to the dry ingredients and mix until just combined. Pour into prepared loaf pan. Bake 50 minutes or until golden and a toothpick inserted in the center comes out clean.
