Mina Halal has recently launched their deli line which features Chicken Wieners, Chicken Bologna and Breakfast Grill Chicken Strips. The breakfast grill chicken strips were the one item we all were excited to try. In my mind I was thinking chicken bacon!
Mina Halal is certified by the Halal Monitoring Authority (H.M.A.) and their processing strictly adheres to the Islamic faith. Mina uses the finest quality fresh chicken. Each chicken is individually blessed and air chilled. The deli line is currently only available in Fresh Co. Ontario locations.
I received the Chicken Wieners and Breakfast Grill Chicken Strips to try. My kids had the Chicken Wieners for lunch and loved them! I like that they have significantly less fat than a beef wiener.
After trying the Breakfast Grill Chicken Strips, I knew this was the product I wanted to use in a recipe and decided to go with a Skillet Tortilla Pizza topped with the crispy chicken strips.
This pizza has to be the quickest and easiest pizza I’ve ever made. My boys love pizza and sometimes will ask for it right before lunchtime. Making pizza dough from scratch would require a couple of hours which is not an option when little tummies are rumbling. This recipe uses tortillas and they cook up super quick in a cast iron skillet. Thin crust pizzas are our favourite and these get super crunchy! I like to go easy on the sauce and toppings since the crust is so thin you won’t want anything overpowering it. For the sauce I used my Quick Tomato Pizza Sauce which worked out really well!
When making this pizza, make sure you have all your ingredients and toppings ready to go because you will need to work fast.
Skillet Tortilla Pizza with Mina Halal Breakfast Grill Chicken Strips
Adapted from Serious Eats
Makes 3 pizzas
6 Mina Halal Breakfast Grill Chicken Strips
3 large tortillas (make sure they fit in your cast iron skillet)
shredded cheese (I shred my own)
Quick Tomato Pizza Sauce
canola oil
Before starting, make sure to have your ingredients ready to go.
Turn the broiler for your oven on.
Heat a cast iron skillet over med-high heat. Reduce heat to just below medium. Add 6 chicken strips and cook until crispy, turning frequently. Remove to a cutting board and cut into small pieces. I used my pizza cutter for this.
To the skillet, add a bit of oil. When the oil is hot and shimmering, using a wadded up paper towel, spread the oil around the skillet. Add a tortilla. Next add a thin layer of tomato sauce, cheese and some cooked chicken strips. Transfer the skillet to the oven and broil until the cheese is melted and the edges have browned. Return to stovetop. If bottom of the tortilla has not browned, cook on stovetop until browned. Remove, cut into wedges and enjoy!
