Homemade bread is one of my favourite things but there is a lot of waiting involved when making bread at home that it isn’t always feasible to do. This recipe for Quick Cottage Cheese Rolls doesn’t involve any yeast so it is super quick to make. They are made with a surprising ingredient, cottage cheese!
I’ve made Cottage Cheese Bread before so I thought these rolls would be just as good! For these dinner rolls, I used Gay Lea Nordica Cottage Cheese. I always have a tub of cottage cheese in my fridge to have as a snack after a workout. I love that it is full of protein and delicious too! Gay Lea Nordica Cottage Cheese is gluten and nut free as well as Kosher certified. It is available in Fat Free, 1%, 2%, 4% and Lactose-Free.
I divided the original recipe in half and made 8 rolls out of the recipe. I also added some salt to help bring out the flavours. These rolls come together very quickly and are made in the food processor. The dough is very sticky so make sure to flour your board well before transferring the dough to it. I rolled my dough into a ball, they didn’t bake that way and come out in all sorts of different shapes giving it a more rustic look. Although these rolls do not have any yeast in them, there are soft and light. They were delicious with some butter. If you want a sweeter roll, you can increase the sugar. Leftover rolls can be stored in an airtight container but the sugar will dissolve into the roll so you won’t get the crunch from the sugar but they are still tasty! I can see a lot of variations of these rolls. Mixing in some cheddar cheese or adding in some herbs would be some great options!
From the end of May through June, Gay Lea is running a fun contest on their Facebook page called Nordi-Cows. Nordi-Cows is an interactive game on Gay Lea’s Facebook page. To play, visit Gay Lea’s Facebook page and pick your favourite cow. You milk your cow twice a day, once in the morning and once in the evening. The more you milk your cow, the more chances you have to win great weekly prizes!

These sound delightful and I love that they are all sorts of shapes and sizes. They look so puffy and tempting, I'm a sucker for bread and can prolly eat all of them.

These were fabulous! Great flavor and texture. A new favorite!
Can this bread be made with grain free flour?
Sorry I haven’t tried it with grain free flour.
Can you make these gluten free?
I’ve never tried it. If you do please let me know how it turned out.
I recently made these with almond flour, and added some shredded cheese and they have a fluffy muffin top consistency. Very yummy!
Thank you for sharing Alicia!
Could one log be made and placed in a bread pan like baking a loaf? I know it seems silly to ask, but I’ve done recipes where it didn’t work in a loaf pan. Can’t wait to try it.
Hi Cecelia, Sorry I haven’t tried to make in one pan like a loaf. Not sure if it would work.
If I want to double or triple the recipe can I make in a mixer
I’m not sure if it would work. The food processor has a blade that breaks up the cottage cheese chunks which wouldn’t happen with a mixer.
I was able to double the recipe successfully with my food processor. You could probably blend the wet ingredients and transfer them to a mixer
Thank you for sharing 🙂
What % cottage cheese do you use? I always have 2% on hand, so hope that is what you used in this recipe.
So sorry for the late reply. I have always used 2%
Do you have to use that specific brand of cottage cheese or do you think other brands will work?
I usually use Gay Lea but any brand should work.
Small curd or large curd cottage cheese, or does it matter?
Hi Barbara, I don’t think it would matter since you are processing in the food processor.
Can I use a blender instead of food processor?
Hi Kellie, A blender should work.
Mine didn’t brown on top. What can I do to get them to brown?
I seem to always have this problem. I can’t get rolls or bread to brown on top.
Sorry for the late reply. You could try to broil them to brown the tops.
I was just innocently scrolling Pinterest and when I saw this I stopped scrolling and immediately made them. Thanks for a great quick bun recipe!
Hi Mela,
Great to hear you enjoyed them! Thanks for taking the time to share 🙂
Will it work if I cut the recipe in half? There’s just the two of us..thanks! I love cottage cheese in my pancakes !
I haven’t tried it but I think it should work. A food processor might be too big. If you have a mini one, that would work better.
These sound good, but don’t think dinner rolls should be “sweet”. I’m going to try without vanilla and sugar topping. Stay tuned!
It’s all about personal preference! Would love to hear back on how they turn out 🙂
