Baked Fresh Strawberry Whole Wheat Doughnuts {SRC}

It is Secret Recipe Club time once again and this month I was assigned Fearless Homemaker.  I’ve been following Amy’s blog for awhile now and absolutely love her photography.  Amy is a homemaker.  She not only shares her recipe, but also shares crafts and entertaining tips.  I love the story of how she and her husband planned a surprise wedding.

Amy’s blog has some amazing food photos.  They are super crisp and clear.  I have such a hard time getting pictures in focus.  I took so many pictures of the doughnut above because they kept coming out blurry.  I’m still not happy with the picture.  So after taking a look at Amy’s pictures again, I decided I needed to do some Googling and find out what I’m doing wrong….well I found out…MANUAL FOCUS!!!  I was using Auto Focus which apparently won’t always keep in focus what you intend to.  Explains a lot….so many times I thought I was selecting what I want to be in focus, only to look at the picture and something else comes on in focus and the main subject is blurry.  I can’t wait to put this new information to use!

After looking through all of Amy’s recipes, it was hard to narrow down just one recipe.  I decided on making Amy’s Fresh Strawberry Whole Grain Doughnuts.  I find baking doughnuts to be very quick and everyone enjoys them. I already have a few baked doughnut recipes on my blog.  Baked Doughnut don’t taste the same as the deep fried ones but they are still satisfying.

I made half of the recipe Amy posted.  But when I went to make the icing, I forgot to cut it in half so my doughnuts had too much icing on them.  So if you make these doughnuts, they will look slightly different from my picture above.  We enjoyed these doughnuts but thought they could have used a pinch of salt.  I’ve added salt to the recipe below.  The doughnuts are not overly sweet and I liked the addition of whole wheat flour.  So please head over to Fearless Homemaker and have a look around Amy’s fabulous blog!

Baked Fresh Strawberry Whole Wheat Doughnuts
Adapted from Fearless Homemaker

Makes 12 doughnuts

1 cup whole-wheat flour
1 cup all-purpose flour
1/2 cup sugar
1 1/2 tsp baking powder
1/2 tsp salt
3/4 cup buttermilk (I used a substitution of milk and vinegar)
2 eggs
1/4 cup honey
2 tbsp butter, melted
1 tsp vanilla
3/4 cup coarsely chopped strawberries

Strawberry Glaze
3 medium strawberries, pureed (approx. 2 tbsp)
1-2 cups icing sugar

Preheat oven to 400 F.  Spray a doughnut pan with oil.

In a bowl, mix together flours, sugar, baking powder and salt.  In a separate bowl, combine buttermilk, eggs, honey, vanilla and strawberries.  Add to the dry ingredients and mix until combined.

Spoon the batter into the prepared doughnut pan.  I found piping with a bag caused for uneven distribution of strawberries.  Bake for 10-12 minutes.  After 5 minutes, transfer to a cooling rack and allow to cool completely.

To prepare the strawberry glaze, whisk together the strawberry puree and icing sugar.  Dip the cool doughnuts into the strawberry glaze and allow to set for about 10 minutes.

  4. I admire your perserverance, and in the end I think you got a great photo. I've never tried baking doughnuts – something else to add to my "must try" list. These look fabulous, and I love that they're made with whole wheat flour, which along with baking instead of frying assuages any possible doughnut eating guilt whatsoever 🙂

  7. These look so yummy! And I think your photo is awesome!! But I totally understand being critical of yourself– I'm the worst at that. Seriously though, this donut looks good enough to eat. Love the pretty color, too!

  11. Made these on a whim yesterday with the extra strawberries in my refrigerator. I used yogurt since I didn't have any buttermilk on hand and they were perfect. Love the fresh chopped strawberries in the batter in addition to the glaze.
