When I bought my ice cream maker attachment I was so excited. Then I looked for recipes and they were all loaded with cream. So my search for a great ice cream recipe without the cream began. After much searching I found a recipe that we all love. And what would a great vanilla ice cream be without great vanilla flavour!
The regular vanilla extract is something that is not Halal due to the presence of alcohol. So for Muslims we need to do a little searching to find a Halal vanilla extract. Some Halal Meat Stores carry vanilla powder but this has a very fake taste. At the recent Toronto Halal Food Festival there was a restaurant that was selling Halal vanilla extract. Luckily I only picked up one…was tempted to pick up a couple. There was something a bit off in the taste and smell. After much searching the BEST vanilla is Nielsen-Massey’s Vanilla Bean Paste.
It is my go-to vanilla. It has the little vanilla seeds so you get that great look in your ice cream. To make this ice cream I used 1 teaspoon of vanilla bean paste and it gives a great vanilla flavour. My husband thought it was a little too much vanilla. I thought it was fine so if you want maximum vanilla flavour use 1 teaspoon of vanilla bean paste. If you would like a more subtle vanilla flavour adjust the amount down.
This ice cream is also a great dessert to have during Ramadan. With the fasts so long there isn’t a lot of time between eating and sleeping. I crave something sweet but I feel so full. This ice cream was the perfect dessert to get some sweetness and not feel stuffed!
Vanilla Ice Cream without the Cream
Adapted from Eating Well
Note: Vanilla Bean Paste is NOT HALAL. You can substitute a vanilla powder but I have not tested this so cannot say anything about the results.
1 1/2 tsp gelatin
1 tbsp water
3 cups whole milk, divided
1/2 to 1 tsp vanilla bean paste (depending on how strong you want the vanilla flavour)
4 egg yolks
1 tin condensed milk (low fat is fine)
In a small bowl, add the water and sprinkle the gelatin on top. Give it a stir.
In a medium saucepan, add 1 1/2 cups milk and the vanilla bean paste. Heat over medium heat until steaming.
In a bowl whisk together the egg yolks and condensed milk. While whisking, slowly pour in the steaming milk. Return this to the saucepan. Cook over medium heat until custard lightly coats the back of the spoon, 3-5 minutes. Do not let the custard boil. Place a strainer over a large bowl and pour the custard in.
Whisk in the gelatin until it is dissolved. Whisk in the remaining 1 1/2 cups milk. Cover with plastic wrap and refrigerate until cold.
Whisk the ice cream. Freeze in ice cream maker according to manufactures directions. When pouring the custard into the ice cream maker, if there are bits of gelatin at the bottom of the bowl don’t pour them in. When you are done churning the ice cream it will not be scoopable. Freeze in a container. Once frozen you will be able to scoop it.

WOW! Ice cream without cream! That's got to be the biggest oxymoron of all time LOL! This ice cream looks crwzy creamy and delicious! InshAllah once I get back I will be making this forsure! Btw, where did you find the halal gelatin? I haven't been able to find it anywhere.

Halal gelatin is easily found in the Halal Food Stores in Toronto. A few years ago you couldn't find it but now I've seen quite a bit.

I would love to try this recipe and like that it is without cream. Anything vanilla works for me, even though most think of it as the most boring flavour for ice cream.
