Garlic Rice Pilaf

This is a simple rice dish that is easy to make.  We love to have it with fish.  It’s a great change up from just plain white rice.  It won’t over power your main dish.  I usually use bottled lemon juice because I’m usually in a hurry but for best flavour use freshly squeezed.  Although it is easy to make it does bake for about 40 minutes.

Garlic Rice Pilaf
Adapted from Annie’s Eats

2 tbsp olive oil
3 cloves garlic, minced or pressed
1 cup basmati rice, washed
2 cups vegetable broth, divided
1/2 tsp salt
1/2 tsp freshly ground black pepper
3 tsp lemon juice

Preheat oven to 350 F.

In a pan, heat the oil over medium-high heat.  Once hot add the garlic and rice.  Cook until golden, approximately 3-4 minutes.  Add 1 cup of broth, salt and pepper.  Stir and bring to a boil.  Once it comes to a boil transfer to a casserole dish and bake for 15 minutes.  Stir in remaining 1 cup of brother and cover.  Bake for an additional 10 minutes.  Add the lemon juice and bake for another 10 minutes or until rice is done and broth has dried up.  If you rice is not done and there is no moisture add a little bit more broth.

Note:  Annie says that this recipe can be doubled without increasing the baking time.  I have not tried this yet.
