Hash Brown Egg Nests
Adapted from SkinnyTaste
1 onion, minced
2 cups shredded potatoes (I used Simply Potatoes)
1 tsp garlic powder
salt and freshly ground pepper to taste
4 eggs (beaten) plus enough egg whites to equal 2 cups
1/2 cup onion, minced
1/2 cup red peppers, diced
1 tbsp Herb Seasoning
4 tbsp parsley or coriander or a combination of both
1 green chilli, minced (I included the seeds)
salt and freshly ground pepper to taste
Preheat oven to 375 F. Generously grease a muffin tin with olive oil spray. Mix together 1 onion, potatoes, garlic powder, salt and pepper. Fill each muffin tin with 1/4 cup of potato mixture. Press down and form a nest. Bake 35 minutes or until golden brown and edges are crispy. Bake them until they are as brown as you like. Once you add the egg they will not brown any more.
Meanwhile, combine the remaining ingredients in a bowl. Once the nests are done fill each with approximately 3 tbsp of the egg mixture. Bake for approximately 17-20 minutes or until eggs are done.
This made 12 egg nests.

Thank you so much for letting me know…I was thinking of making them for Arjumand, and when she comes there are more kids than adults (hehe masha'Allah)…Jibreel won't even go near eggs but this looks really good and I am always looking for ways to get him to try them.
